Kusaya(A Dried Fish)
(July 5, Chiyoda-ku, Tokyo)


This picture, Kusaya is famous for its strong bad smell when it grilled. It is produced in Oshima nearly 120 kilometers away from the center but belongs to Tokyo, too or other neighboring islands(Izu Islands). It is said some one would be addict if they eat. It is seemed the beginning that they used the salt water again and again when they dried fishes.Because they can't use salt freely in Izu Islands because of the shogunate's policy in Edo period(from the early 17th century to the mid-19th century). Amino acids coming from fishes after soaking in salt water again and again, ferment the water.
